Ingredients:
For the batter:
2 cups Sugar
1/2 cup Canola Oil
2 Eggs
1 1/2 tsp Vanilla Extract
2 cups Flour
1 tbsp Pumpkin Pie Spice
2 tsp Baking Powder
1/2 cup Buttermilk
4 Apples, peeled and diced
For the icing:
2 cups Powdered Sugar
1/2 cup Butter
2 tbsp Milk
Instructions:
Preheat oven to 350 degrees. In a large bowl whisk together the sugar, canola oil, eggs, and vanilla extract until smooth. In a separate bowl sift together the flour, pumpkin pie spice, and baking powder. Add the dry ingredients into the wet ingredients. Stir in the buttermilk until combined, then fold in the apples.
Pour into two greased 8-inch baking pans. Bake for 30-40 minutes or until a toothpick comes out clean. Let cakes cool on a wire rack. For the icing, in a stand mixer whisk together the powdered sugar, butter, and milk until light and fluffy. Once the cakes are cooled, ice them how you like. Enjoy!
