Ingredients:
2 cups warm Water
3 tbsp Sugar, plus 1 tbsp
2 packets Active Dry Yeast
5-6 cups Flour
1 tsp Salt
1 tbsp Vegetable Oil
2 tbsp Cornmeal
12 cups Water
Optional toppings

 

 

Instructions:
In a stand mixer with a dough hook, add the water, 3 tbsp of the sugar, and the yeast. Mix then let rest 5 minutes. Slowly add 4 cups of flour plus the salt. Once combined, add an additional 1-1 1/2 cups of flour until not sticky. Take out of the mixer and knead until smooth. Place the dough in a greased bowl and cover. Let rest for 1 hour.

Grease a baking sheet with the oil. Punch down the dough and divide into 12 balls. Roll out into a log and join the ends together to make a bagel shape. Place on the baking sheet. Cover and rest for 25 minutes.

Preheat oven to 400 degrees. Spread the cornmeal out on another baking sheet. Bring the 12 cups of water to a boil with the extra tbsp of sugar. Boil each bagel for 30 seconds on each side. Dip into optional toppings and place them on the baking sheet. Bake for 5 minutes, then turn over and bake for an additional 30 minutes or until done. Let cool. Enjoy!
