Ingredients:

1 Small Yellow Onion, chopped
1 Celery Stock, chopped
2 Carrots, chopped
1 tbsp Olive Oil
2 lbs Ground Beef (or mix of pork and beef)
Salt + Pepper
2 Garlic Cloves, minced
1 can Whole Peeled Tomatoes
1 can Tomato Paste
2 tbsp Chicken Stock
2 tsp sugar
1 Bay Leaf
1 tbsp Italian Seasoning
1 tbsp Oregano
1 tbsp Sweet Basil

Instructions:

Heat olive oil in a pan and add the ground beef. Cook through and remove with a slotted spoon. Drain most of the fat in the pan.

Add onion, celery and carrots into the same pan and cook until tender. Season with salt and pepper.

Add the meat back into the pan. Also add the garlic.

Add the can of whole peeled tomatoes with the juice, crushing each tomato by hand before putting it in the sauce. Add the can of tomato paste and stir to combine.

Add the chicken stock and season again with salt and pepper. Add the sugar, bay leaf, Italian seasoning, oregano and sweet basil.

Simmer at least 30 minutes, but as long as all day. Remove the bay leaf. Serve over pasta and enjoy.
