Ingredients:
4 stalks celery, chopped
3-4 carrots, chopped
4 yellow onions, chopped
1 1/2 tbsp salt
1 1/2 tsp fresh ground black pepper
1 1/2 tsp oregano
3 cloves garlic, minced
2 tsp brown sugar
One 4-5 lb brisket, or 3 1.5 lb briskets
4 cups tomato juice
Instructions,
Preheat oven to 350 degrees. Combine salt, pepper, oregano, garlic and sugar in a small bowl. Rub on meat in a baking dish. Pour the onions, celery and carrots on top. Pour tomato juice over the top of that, until it goes 3/4 of the way up the meat. Cover the baking dish with two sheets of parchment paper and one sheet of aluminum foil. Bake for 3 hours or until meat is tender.
Take the meat out of the dish and cover with foil to keep warm. Cook the sauce in the baking dish on medium heat until thickened. Slice the meat and place back into the sauce. Serve over egg noddles or whatever you like. Enjoy!
