Project Description

Ingredients:
6 tbsp Butter
1 small Onion, chopped
1/4 cup Flour
2 cups Half and Half
3 cups Chicken Broth
1 bay Leaf
1/8 tsp Nutmeg
1 head of Broccoli, chopped into florets
1 Carrot, diced
Salt & Pepper
1 1/2 cups Yellow Cheddar
1 cup White Cheddar

Instructions:
Add the butter to a large pot and melt over medium heat. Add the onions and cook until translucent. Add the flour and whisk. Cook for 3 minutes. Add the half and half, and chicken broth. Whisk to combine. Cook to thicken for 20 minutes. Add the bay leaf and nutmeg. Add the broccoli and carrot. Cook an additional 20 minutes until broccoli is cooked through. Add salt and pepper. Remove the bay leaf and blend until smooth. Add both cheeses off the heat. Once melted, enjoy!
