Ingredients:
For the batter:
1 cup Butter
2 cups Sugar
4 Eggs
1 tbsp Vanilla Extract
3 cups Self-Rising Flour
1 cup Buttermilk
For the frosting:
4 cups Sugar
2 cups Buttermilk
1 cup Butter
1 cup Vegetable Oil
2 tsp Baking Soda
Instructions:
Preheat oven to 350 degrees. In a stand mixer beat together the butter and sugar until light and fluffy. Add the eggs in one at a time. Incorporate the vanilla extract. Alternate adding the flour and buttermilk with the mixer on low, starting and ending with the flour.
Pour into 3 greased 8-inch cake pans and bake for 25 minutes or until a toothpick comes out clean.
While the cakes are baking, place the sugar, buttermilk, butter, vegetable oil, and baking soda in a large dutch oven or pot. Cook to 240 degrees then place in a stand mixer and whip until light and fluffy.
Once the cakes are cooled, frost and enjoy!
