Ingredients:
1/4 cup Warm Water
2 tsp Active Dry Yeast
1 tsp Sugar
3 1/2 cup Flour
1/3 cup Brown Sugar
1 tsp Salt
2 Eggs
1 tsp Vanilla Extract
3/4 cup Pineapple Juice
1/4 cup Butter, cubed and softened
Instructions:
Mix the warm water with the yeast and sugar. Set aside to rest. In a stand mixer, combine the flour, brown sugar, salt, 1 egg, vanilla extract, pineapple juice and the yeast mixture. Once a dough has formed, with the mixer still on, add the butter, one cube at a time until all fully incorporated. Knead an extra 10 minutes. Add the dough to an oiled bowl and cover to rest for 1 hour. Grease a baking dish and divide the dough into 9-16 balls. Add it to the baking dish and cover to rest for another 30 minutes. Preheat oven to 350 degrees. Brush the remaining egg (whisked) on top of the dough balls. Bake for 20-25 minutes or until golden brown and cooked through. Enjoy!
