Ingredients:

2 tbsp Olive Oil

1 Red Onion, diced

2 Carrots, peeled and diced

2 cloves Garlic, minced

5 Large Tomatoes, diced

1 tsp Sugar

1 tbsp Tomato Paste

1/4 cup Basil, chopped

3 cups Chicken Stock

Salt & Pepper

1/2 cup Heavy Cream

1/4 cup Parmesan

 

 


Instructions:

Heat the oil in a large pot on medium heat and add the onion and carrots. Cook until very tender. Add the garlic and cook another minute. Add the tomatoes, sugar, tomato paste, basil, chicken stock, salt and pepper. Simmer for 30-45 minutes. Use an immersion blender or blend in batches until smooth. Add the cream and parmesan. Once combined, enjoy!
