Ingredients:
5 pounds Russet Potatoes, peeled and cut into quarters
2 Eggs
3 cups Flour
2 tsp Salt

Instructions:
Boil potatoes until cooked, then drain. Grate potatoes on a box grater and place into a large bowl. Pour potatoes onto your work surface and create a well in the center of the potatoes. Add the eggs and knead into the potatoes. Add the flour and salt and knead until combined. Don’t overwork.

Separate dough into two rounds. Divide one round into quarters. Roll out a quarter into a 1 inch log. Cut the log into 1/2 inch pieces. Shape if you want. Repeat with the rest of the dough. Boil the gnocchi for 2-3 minutes, until they float. Toss with sauce or whatever you like. Enjoy!
