Ingredients:
3/4 cup Graham Cracker Crumbs
1/3 cup Sugar
5 tbsp Butter, melted
2 tsp Key Lime Zest
3 Egg Yolks
1 can Sweetened Condensed Milk
2/3 cup Key Lime Juice, fresh squeezed
Whipped Cream, for topping
Instructions:
Preheat oven to 350 degrees. Mix together the graham cracker crumbs, sugar and butter until it feels like wet sand. Press into a pie plate, including up the sides. Bake for 8 minutes or until set.
In a stand mixer beat together the egg yolks and key lime zest until light and fluffy While the mixer is still on, stream in the sweetened condensed milk until fully combined. Do the same with the key lime juice. Pour the filling into the crust and bake for another 15 minutes or until set. Let fully cool then refrigerate for a few hours. Top with whipped cream. Enjoy!
