Ingredients:
For the crust:
15 Cinnamon Graham Crackers
1/4 cup Sugar
4 tbsp Butter, melted
For the filling:
1 lb Cream Cheese, softened
1 cup Sugar
1/4 tsp Salt
2 Eggs
2 Egg Yolks
1/3 cup Sour Cream
1 tsp Vanilla Extract
For the topping:
1 lb Strawberries, sliced
2 tbsp Sugar
Instructions:
Preheat oven to 350 degrees. In a plastic bag, add the graham crackers and break them up until they are fine crumbs. You can also use a food processor for this. Add the crumbs to a bowl. Add the sugar and butter and mix until combined. Prepare a muffin pan with liners. Spoon about 2 tbsp of the mixture into each liner. Press down so they are packed into the bottom. Bake for 8 minutes until golden and set.
In a stand mixer, add the cream cheese, sugar and salt and mix until light and fluffy. Add the eggs and egg yolks, one at a time. Add the sour cream and vanilla and mix until fully incorporated. Using an ice cream scoop, spoon the mixture into each of the muffin tins, filling about 3/4 of the way up the tin. Bake for 20 minutes until set and slightly golden on top. Cool completely.
Mix the strawberries and sugar together and let macerate for a few minutes. Add to the top of the cheesecakes. Enjoy!
