Ingredients:
For the filling:
5 small Peaches, sliced thin
3/4 cup Sugar
3/4 tsp Cinnamon
1 tsp Lemon Juice
For the batter:
4 tbsp Butter
3/4 cup Flour
3/4 cup Sugar
1 1/2 tsp Baking Powder
1/4 tsp Salt
3/4 cup Milk
1 tsp Vanilla Extract
Instructions:
In a large skillet combine the peaches, sugar, cinnamon, and lemon juice. Bring to a simmer until the sugar is dissolved. Set aside.
Preheat oven to 350 degrees. Place the butter in the baking dish and let it melt in the oven while preheating. In a large bowl combine the flour, sugar, baking powder, and salt. In a measuring cup whisk together the milk and vanilla extract. Slowly pour the milk mixture into the flour mixture and stir to combine.
Pour the batter over the melted butter in the baking dish. Lay the peaches on top of the batter. Bake for around 45 minutes or until golden brown and cooked through.
