Ingredients:

1 cup, or around 3 Persimmons, peeled and cored
1 cup Sugar
1/2 cup Butter
1 Egg
1 tsp Baking Soda
1/2 tsp Salt
1 3/4 cup Flour
1/2 tsp Cinnamon
1/2 tsp Nutmeg
1/2 tsp Allspice

Instructions:

Preheat oven to 350 degrees. Combine sugar and butter in a large bowl and whisk to combine. Add the egg, and persimmon pulp and combine. Add the baking soda and salt. Add the flour and spices and stir to mix.

Once combined, take an ice cream scoop (or two spoons) and drop the dough into cookie-sizes rounds on a greased baking sheet. Bake for 10-12 minutes. Cool and Enjoy!
