Ingredients:

1 tbsp Olive Oil

2lbs Bone in Short Ribs

1 Onion, diced

2 Carrots, diced

2 tbsp Tomato Paste

2 cups Red Wine

1 28oz can Crushed Tomatoes

1 cup Beef Stock

1 tbsp Dijon Mustard

1 Bay Leaf

5 Sprigs Thyme

Salt & Pepper

 


Instructions:

Heat the oil in a large pot over medium high heat. Season the short ribs with salt and pepper and brown them on all sides in the pot. Take them out and add the onion and carrot. Sauté until tender. Add the tomato paste and cook for 1-2 minutes. Add in the wine and cook until reduced slightly, about 10 minutes. Add the crushed tomatoes and beef stock. Stir to combine. Add the mustard, bay leaves and thyme. Make sure everything is incorporated. Then add the ribs back into the pot. Cover and simmer for 2 hours. Take the meat out and shred it, then return it to the sauce. Simmer another 10 minutes. Serve over pasta or however you like. Enjoy!
