Ingredients:
2 cups plus 3 tbsp Bread Flour
1/4 tsp Active Dry Yeast
1 1/2 tsp Salt
1 1/2 cups Water
3 tbsp Cornmeal

Instructions:

In a large bowl whisk together the flour, yeast, and salt. Add the water and mix until combined. Cover the bowl with plastic wrap and let sit at room temperature for 19 hours.

Turn the dough out onto a floured surface. Roll it around a few times then cover with a towel and let rest for 15 mins. Knead the dough for a few minutes until it is a cohesive ball. Sprinkle the cornmeal on the towel and place the dough on one half. Cover with the other half and let rest for 2 and a half hours.

Preheat oven to 450 and place your Dutch oven inside to preheat. Once the dough is done resting, place it in the preheated Dutch oven. You can score the dough at this time. Cover and bake for 30 minutes. Uncover and bake another 15 minutes. Cool for 15 minutes. Enjoy!
