Ingredients:
For the crust:
1 1/2 cups flour
1/3 cup sugar
3 tbsp cornstarch
1/4 tsp salt
3/4 cup butter, cubed
For the filling:
2 cups freeze-dried strawberries
2 1/3 cups sugar
4 eggs
2 egg yolks
4 tbsp butter, melted
1/3 cup flour
3/4 cup fresh-squeezed lemon juice
Instructions:
Preheat oven to 350 degrees. In a food processor combine flour, sugar, cornstarch, salt and butter until it forms a dough. Press dough into a tin foil lined and greased baking dish. Bake for 30 minutes, then cool.
Drop the oven temperature to 300 degrees. For the filling, pulse freeze-dried strawberries in a food processor until it forms a powder. In a separate large bowl, combine sugar, eggs, egg yolks and melted butter and whisk. Add flour and mix. Add lemon juice and whisk to incorporate. Add the freeze-dried strawberry powder and stir to combine. Pour over crust and bake for 30-35 mins. Cool in the refrigerator for at least an hour. Cut and dust with powdered sugar, to taste. Enjoy!
