Ingredients:

2 large Russet Potatoes, peeled, sliced thick, and with a chopstick slice in each direction, but not all the way through, to create small squares

1/3 cup Butter, melted

1 tbsp fresh Parsley, chopped

1 large clove Garlic, minced

Salt & Pepper

1/2 tsp Oregano

3 tbsp Parmesan

 


Instructions:

Preheat oven to 400. Combine the butter, parsley, garlic, salt, pepper, oregano and Parmesan in a bowl. Place the potato squares on a baking sheet. Brush the butter mixture over them. Bake for 20 minutes. Flip and brush with more of the butter mixture. Bake for another 20 minutes. Enjoy!
