Ingredients:

1 tbsp Butter

1 Shallot, minced

1 Jalapeño, diced

2 cloves Garlic, minced

2 Chipotle Chiles, diced

1 1/2 cups Half and Half

1 tbsp Cornstarch

4 oz Cream Cheese

1 tsp Dijon Mustard

12 oz Cheddar Cheese (any type)

Instructions:

In a medium pot over medium heat add the butter, shallot, garlic, and jalapeño. Cook until softened. Add the chipotle chiles and half and half. Whisk in the cornstarch. Bring the mixture to a simmer then lower the temperature to medium low. Add the cream cheese and mustard. Slowly add the cheese until fully incorporated. Season, if needed. Enjoy!
