Ingredients:
5 pounds Russet Potatoes
2 tbsp oil
Salt + Pepper
1 stick Butter, melted
1/2 cup Sour Cream
1/4 cup Heavy Cream
1/4 cup Cheddar, plus more to sprinkle on top
Instructions:
Preheat oven to 400 degrees. Place the potatoes on a baking sheet and add the oil and salt. Rub all over the potatoes. Prick the potatoes with a fork, and bake for 1 hour.
Once the potatoes are cooled, slice in half and scoop out the center, leaving a thin barrier around the sides. Mash the potatoes in a medium bowl and add the butter, sour cream, heavy cream, salt, pepper and cheddar. Mix throughly. Scoop mixture back into the potato halves. Bake for 15 minutes. Take out and sprinkle the tops with cheddar. Bake another 5 minutes. Enjoy!
